Nigerian Tomato Stew

Ingredients:

  • Your choice of boiled assorted meat (beef, chicken, tribe, beef skin, beef feet)

  • 4 cups Vegetable oil

  • 2 Red bell pepper

  • 6 Roma tomatoes

  • 1 -2 scotch bonnet peppers

  • 2 big onions

  • 2 Bouillon

  • 1 TBS curry powder

  • Salt to taste

  • Beef or chicken broth

 Directions:

  1. Blend tomatoes, bell pepper, 1 onion, and scotch bonnet pepper. Set aside.

  2. In a frying pan, heat up about 4 cups of vegetable oil, add half chopped onion and your choice of boiled meat, fry till golden brown.

  3. Take out about 2 cups of oil from what is left after frying your meat into another pot and fry the other half onion for about 2 minutes.  Add 1 1/2 tbs bouillon. Stir and fry for 1 minute.

  4. Add blended tomato and pepper mixture. Stir and cook for about 20 minutes.Stir constantly.

  5. Add 1 to 2 cups of beef or chicken broth, add fried assorted meat, half tbs bouillon, curry powder and salt to taste, cook for another 15 minutes.

Can be served with boiled white rice and fried yellow plantain. Can also be serve with fries.
